Bathroom addition to existing upstairs and floor plan idea for remaining space

We have just closed on a 1998 home in WA State. There is a large upstairs space with two smaller rooms to either side. We definitely want to add a bathroom in one of the rooms, but both of the attached rooms are larger than what we'd want for a guest bathroom (more of a large master bathroom suite size of space). We need help designing a space that will work for the bathroom and would love ideas on what else we can use the extra space for. We have three kids, and already have the bedrooms necessary for them. We might love another office/homework space (for when they are older)? or Storage maybe/extra closet? Potentially reconfiguring walls is an option we'd like to consider. Can you help us? If so, what do you think the best way of payment would be? Hourly/project?
You would just be working with myself and my husband. Depending on how this project should go, you might work with the contractor, but I'm thinking that will take your ideas and communicate them to a contractor to execute.
