Converting a Lotus 1-2-3 sheet to a sortable Excel 2007 template or Access Databse

I am looking to convert a legacy unsortable Lotus 1-2-3 spreadsheet to Excel 2007 (or Access database).? I am not looking to convert the data in the current spreadsheet but to get a template developed that can be used for the future and can be sorted and organized as with the state of our current sheet we cannot re-order anything and because of this things just get added to the end in a random fashion.
Here is an example of what our sheet looks like now:

The server name goes across the top, then we have a date, a start time, and end time, and then a calculation for the total duration.? This has the ability to calculate times that span across two days, so starting at 12 pm on a Monday and having the backup end at 1 pm on a Tuesday would be 25 hours, not 1 hour.
I don't want the new spreadsheet or database to look exactly like the old one, if we can come up with a new way of doing this that can provide the same functionality and ease of reading yet also provide us with the ability to sort based on server name, that will be fine and the old way of doing things can be retired.? The main concern that I have is just getting something that I can add a new server in and then be able to sort everything and get into order.
## Deliverables
1) Complete and fully-functional working program(s) in executable form as well as complete source code of all work done.
2) Deliverables must be in ready-to-run condition, as follows? (depending on the nature? of the deliverables):
a)? For web sites or? other server-side deliverables intended to only ever exist in one place in the Buyer's environment--Deliverables must be installed by the Seller in ready-to-run condition in the Buyer's environment.
b) For all others including desktop software or software the buyer intends to distribute: A software? installation package that will install the software in ready-to-run condition on the platform(s) specified in this bid request.
3) All deliverables will be considered "work made for hire" under U.S. Copyright law. Buyer will receive exclusive and complete copyrights to all work purchased. (No GPL, GNU, 3rd party components, etc. unless all copyright ramifications are explained AND AGREED TO by the buyer on the site per the coder's Seller Legal Agreement).
