Cat Illustration from Photograph

My client has a family crest that they would like modified to incorporate an illustration of their cat.
Attached is a photograph of the family's cat. I would like to have an Black & White line art illustration of the cat's face to use on the crest.
Currently, the crest (attached) utilizes a Victorian engraving that features a lion's face in the center of the crest. I would like to replace the lion's face with the new illustration of the cat.
So essentially, the scope of this project includes:
1. Create an illustration of the cat's face from the illustration
2. Insert it into the current family crest (I can provide an .eps or .ai file so that the "V" may be separated from the rest of the crest)
3. Provide to me as .eps/.ai file
This is an urgent request. Your assistance is greatly appreciated.
