Charset problems on php E-Card system(repost)

I have php pages that send E-Cards. This programm enables the user to enter his name, his e-mail, the recipient name , e-mails and a message, that will be delivered to the recipient. Thanks to and admin table, the administrator can set the values of the alert message saying « Hello, you received an e-card from… » etc.. The system is unfortunately not sending the chinese characters properly on certain e-mail systems. The programm is open sourced and we can set every pages/parameter of the project.
