Hello, In my description you can see that I use many different software for my regular job. For project like yours I use ArcGis or QGIS, they both make geographically accurate, nice and cool maps, and they can do really good job. But you want to project be done in QGIS, and I will do that. My way to make maps like this is: first import base map (if you don't have georeferenced orthophoto) and GPS layers, than I make different layouts, but you must tell me what size and scales of maps you want, and that is it.
