Linux raid Partitions on 2 servers

I have several servers to reconfigure, debian 9. On has 6 disks, 2 are used for system in Raid 1. I need to configure the 4 remaining in Raid 1. I want also to try other config like Raid 5. The other server is installed on 1 disk, there are 2 other disk to be configured in Raid 1. For both config I need to be able to restore even in cas main system disk has a failure and need to be replaced (mainly it will be about saving the proper config files like fstab). I will off for 2 hours, then I will need you help
