Simplification: Updates to calendar and some simple theme work for [login to view URL]

Need a person to update a couple of items on [login to view URL]
Would like to eliminate dynamic price and option to pay with credit card on site.
Want to keep calendar per property showing nearby the price list (It must be set up so I can change this myself through the theme year after year).
So basically:
Calendar is visible for all properties as it is today - showing booked and free weeks. This is today handled through theme and needs to be in future.
We need to shut down dynamic pricing as it just creates confusion.
We need to remove option to pay by credit card.
Remove option to book and pay directly - instead people can send inquiry and we will bill.
This need to be done for all 4 properties on site (in both English and French).
Remove all unneeded tools related to above, so site is simpler
It is not hard or huge work, but must be done very carefully.
