Stripe Expert Give Advice on Auth and Capture Model

Hi ▬ I will make this very simple ▬ We have a business model where we can't charge the actual amount until the product has been delivered, the actual amount varies due to delivery fee ▬ So we want the client to come to our website & place an order and we take their card info (Using authorize() ) ▬ Then after delivery we capture the adjusted amount Right now I don't need coding, I just need a Stripe or even PayPal expert who has past experience in this to confirm that it is doable I will pay immediately to the developer who answers from experience I don't want answers solely based on stripe docs/forums
