In keeping with the national and international trends, and the gap in the market, the proposed restaurant’s concept must reflect an up market, modern contemporary Australian style of cuisine for its guests. As part of the F&B project management team you are required to prepare a detailed proposal concentrating on the following three (3) aspects:
1. Plan a restaurant concept and design a high quality a la carte menu, suitable wine list and appropriate pricing of dishes and beverages.
2. Design the layout of the food service area of this restaurant, showing its capabilities of efficient flow of customers and staff, along with techniques to develop restaurant ambience.
3. Develop product and service quality systems for the implementation within the restaurant.
